In the winery: fermentation takes place in temperature controlled (max. 320 C) stainless steel vats. Malolactic fermentation follows the alcoholic. The wine subsequently rests for 18 months in 75% new and 25% second usage barriques. It is bottled after a light clarifying 24 months after the harvest and is put on the market 3 autumns later
